Petit Sainte Maure is a classic cheese from Poitou, in the Loire Valley.
The texture is buttery and smooth. It should be denser and drier with a fin grey-blue rind made of natural ashes. The taste is slightly citrusy and acidic and develop richer, earthy aromas.
Will pair surprisingly well with a white wine from Loire Valley such as a Sauvignon Blanc, a Pouilly Fumé or Sancerre.
