Abondance AOC wheels are named for cattle introduced by the Abondance Monastery in the XIth century. Made in the region of Haute Savoie, the cheese has since 1990 been enjoying the AOC appellation.
Like a small Beaufort, they have a complex, balanced, tangy, salty, sweet flavour. Also, the rind develops a grey layer beneath its surface.
Can be eaten as it is or melted. Will pair well with a Malbec or a Cabernet Sauvignon.
