During aeration, the bouquet unveils delightful raspberry and black pepper notes. At last, a bold attack precedes a palate with a lively acidity. It which mingles perfectly with a variety of scents. The enduring finish entices with its aromatic richness.

Food Pairing recommendations: This Haut Medoc will be a great friend with cold cut platter or a Hard paste cheese platter with Tomme de Savoie. A delight with turkey but also fishes such as salmon fillet.

About the Vintage 2021 and the Harvest for Heritage de Chasse Spleen

A particularly wet and mild winter came before a warm March. As a result it advanced an early budburst in the vineyard.

Indeed, April was marked by severe frosts which impacted the vineyard. Then, flowering took place under rainy conditions. It was more even on the merlot vines than those of cabernet sauvignon. A seasonal summer saw periodic rains during the harvest, at full ripeness of the grapes.
