Then, this semi-pressed, uncooked cheese is distinguished by its distinctive ash-coated rind, adding to its rustic allure.
Produced by La Ferme de la Tremblaye, nestled in the picturesque village of La Boissière-École, Surely, Pavé de Paris embodies the essence of artisanal tradition.
Indeed, its shape and appearance evoke a large paving stone. It is the reminiscent of the iconic cobblestones lining the streets of Paris. Those stones are an enduring symbol of the city’s rich history.
When sliced, the cheese reveals a captivating marbling of yellow and white. This color is characteristic of Jersey cow’s milk and goat’s milk, with a unique layered structure formed by alternating curds from each milk type.
Aging takes approximately three months to develop its full character. During this time it matures to perfection.
The rind, coated with vegetable charcoal ash, is beautifully sculpted with pits and covered in a delicate white-gray down, creating a striking resemblance to Parisian granite cobblestones.
On the nose, Pavé de Paris offers subtle hints reminiscent of a cool cellar. Tasting reveals a harmonious balance: fruity notes at the core, complemented by clean, mineral flavors on the rind—making it a truly distinctive cheese experience.
