The texture is soft and the rind is bloomy. Coeur de Coupigny is made in the region of Haute Normandie nearby the famous appellation Neufchatel.
Legend says that young maidens of the region used to gift this cheese to their gallants. Meanwhile priest would describe the shape as an angel wings.
Expect a soft and smooth paste with a pronounced taste. Pairs perfectly with a crusty bread and a red wine from Beaujolais region such as Saint Amour or a Cotes Du Rhone.
