Châteauneuf du Pape White Remy Ferbras

Châteauneuf du Pape Remy Ferbras vintage is 2022.Now available at Monsieur CHATTE.

This exceptional Southern Rhône red wine comes from a famous vineyard in France, known for its historic papal ruin and remarkable winemaking heritage. Located in the Southern Rhône Valley, this rising cru continues to attract attention through its creativity, distinctive terroir, and expressive wines. As a result, it offers a memorable taste of one of France’s most celebrated wine regions.

The vineyard benefits from a unique combination of sandy and limestone soils. In addition, rolled pebbles cover the surface and help retain heat from the sun. These conditions support excellent grape ripening and encourage depth, concentration, and balance. Therefore, the terroir gives the wine both Mediterranean warmth and refreshing structure.

The winemakers combine three classic Rhône grape varieties: Grenache blanc – Bourboulenc – Clairette.

This elegant Rhône white wine begins with a careful manual harvest. The winemaking team then sorts the grapes strictly, keeping only perfectly healthy fruit. This meticulous approach helps preserve the wine’s freshness, purity, and aromatic complexity.

The winemakers use direct pressing for the Grenache and Clairette grapes. Meanwhile, they give the Bourboulenc grapes a cold skin maceration to enhance their delicate aromas and structure. After settling the juice, temperature-controlled alcoholic fermentation takes place. This precise process protects the wine’s bright fruit character and maintains its natural balance.

Part of the wine then ages on fine lees in casks. As a result, it develops a richer texture while retaining its freshness and elegance.

Tasting notes for Châteauneuf du Pape:

In the glass, this refined Rhône white wine shows a clear, brilliant light-gold color.

On the nose, it offers a complex and expressive bouquet of fresh pear, acacia blossom, and linden flower. On the palate, the wine feels opulent and silky. Its balanced structure leads to a long, persistent finish.

Wines & Food Pairing recommendations:

For the best experience, serve this wine at 15–16°C.

It pairs especially well with a creamy scallop risotto, while its elegance also complements delicate seafood dishes and rich shellfish recipes. Although enjoyable now, the wine can develop beautifully over five to ten years.

Marquis de Ravardel Châteauneuf du Pape

Marquis de Ravardel Châteauneuf du Pape vintage is 2021. Now available at Monsieur CHATTE.

The Domaine was born from the union between two families, Marquis and Ravardel. Originally from Châteauneuf-du-Pape, the Marquis have been producing wine
since 1811 and forged a name for themselves in the era of Paul and Téophile, in 1923. alongside Baron Le Roy, and they worked to create the first French wine AOC
in 1936. The Balmean Ravardel family devoted itself to viticulture, market gardening and livestock farming, and sold its products on the markets of the Vaucluse plain.

The winemakers harvest the grapes at full maturity and partially destem them. They then use gentle, extended vinification to preserve the fruit’s natural character. After fermentation, the wine ages entirely in concrete vats. This approach allows the terroir and grape variety to take center stage without the influence of oak.

Grape Variety: Grenache Syrah Cinsault Counoise

Tasting notes for Châteauneuf du Pape:

The wine offers a pure and precise expression of its origin. Its no-frills style reveals the essence of the grape through naked elegance, refined balance, and impressive accuracy. Rather than relying on excessive extraction or oak, the wine delivers a clear and authentic taste of the Southern Rhône.

Wines & Food Pairing recommendations:

It also works beautifully with roast game, grilled lamb, beef stew, and hearty Mediterranean dishes.

Serve this wine at 15–16°C to reveal its full aromatic and textural character. Finally, enjoy it between five and ten years after the vintage. With careful cellaring, the wine can develop additional depth and complexity while preserving its vibrant fruit profile.

These conditions support excellent grape ripening and encourage depth, concentration, and balance. Therefore, the terroir gives the wine both Mediterranean warmth and refreshing structure.

The winemakers combine three classic Rhône grape varieties: Grenache, Syrah, and Mourvèdre. Grenache contributes ripe red fruit, roundness, and generous texture. Meanwhile, Syrah adds spice, structure, and aromatic complexity. Mourvèdre brings depth, character, and a firm backbone. Together, these varieties create a rich and harmonious Southern Rhône blend.

The team harvests the grapes by hand and carefully sorts them before vinification. This strict selection ensures that only healthy, high-quality fruit reaches the cellar. Furthermore, the winemakers vinify each grape variety separately. This approach allows them to preserve the individual character of Grenache, Syrah, and Mourvèdre before blending the final wine.

During fermentation, the temperature remains between 26 and 28°C. The wine also undergoes two to three weeks of maceration. Consequently, the process extracts vibrant color, generous fruit flavors, and elegant tannins. After fermentation, the winemakers age part of the wine in oak barrels that have already held two or three wines. This maturation can continue for up to 18 months, adding complexity while allowing the fruit to remain at the center of the profile.

Tasting notes for Châteauneuf du Pape:

In the glass, the wine displays a bright ruby color. Its complex nose reveals attractive red-fruit aromas, followed by lively notes of spice. On the palate, the wine feels round, full-bodied, and generous. Silky tannins provide a smooth structure, while crisp fruit flavors deliver freshness through the finish. As a result, the wine combines power, elegance, and balance

Châteauneuf du Pape Blanc “La Cour des Papes”

Vintage: 2021

Grenache and Clairette dominate the blend, accentuated by subtle hints of Bourboulenc and Picpoul. Sand terroirs and sandstone from the western part of the appellation come into relief,
with Grenache expressing notes of pear, fig leaves, and verbena.

As for the Clairette, it reveals aromas of bergamot, mandarin, and blood orange. The common denominator of these two terroirs is their surprising salinity, which can only be described as captivating.
Then, the operations that go into making this wine are extremely precise. Indeed, the grapes are harvested by hand at the very moment they reach optimal ripeness and at the coolest times of
day. They use a meticulous sorting process to select only the most beautiful berries then leave them to macerate in the press. Next comes a gentle pressing with press and free-run juices separated
and cold settled.

Then comes the fermentation, half in demi-muids and barrels and the other half in stainless steel tanks. After a light racking, the wine is aged on fine lees with batonnage for 7 to 9 months in these same containers.
The resulting wine is of a rare balance and precision. The nose is delicate, marked by citrus and brioche enhanced by a bouquet of fresh herbs over aniseed and fennel. Overall the mouthfeel, round and yummy, gracefully delivers pure fruit and lovely bitters leading to a long finish.

Jeb Dunnuck Note: 91pts

Tasting comments: “Lots of fruit-forward aromatics of peach, Bananas Foster, brioche, and honeysuckle emerge from the 2021 Châteauneuf Du Pape La Cour Des Papes Blanc, a medium-bodied, exotic, textured, yet still fresh and lively white. This is geared for the dinner table and has tons to love.”
