Pinot Blanc comes from the hillside vineyards, harvested entirely by hand on the famous Ribeauvillé geological fault, offering an incredible diversity of terroirs.
Grape Variety: 100 % Pinot Blanc (dry).
The grapes are harvested exclusively by hand.
First , they press the Whole bunches in pneumatic presses to avoid crushing.
Then juices are separated to optimise the quality of the wines.
After static settling, the wines are fermented under temperature control and then matured on fine lees for 3 to 6 months.
Tasting Notes: First the nose of this Pinot Blanc is intense. Then you will enjoy fine notes of hazelnuts and flowers. At last on the palate, this Pinot Blanc is soft and fruity, with suppleness and freshness.
Food Pairing: First, enjoy this Pinot Blanc as an aperitif or with fish.
Then, it goes very well with dishes from Alsace such as quiches or poultry liver terrines.

What is HEV?
High Environmental Value corresponds to the highest level for a environmental certification for farms.
The farm environmental certification is a voluntary approach. It aims to identify and promote environmentally-friendly practices applied by farmers.
HEV covers four key areas: First, biodiversity conservation then plant protection strategy, management of fertiliser use but also management of water.
First, Cave de Ribeauvillé covers a single vineyard of 235 hectares with 8 Grands Crus and numerous terroirs of great value.
Then a quality charter manages the entire estate. It guarantees manual harvesting, strict control of yields, work in the vineyard using reasoned control or organic farming.
All the grapes are brought to the press in whole bunches. The juice then flows by simple gravity into the vats. Thanks to state-of-the-art equipment, the wines of the Cave de Ribeauvillé respect the purity of the grape variety and the identity of each terroir. The wines are frank, straight, fresh, fruity and express all the richness of the great Alsatian terroirs.
