Charles Simon Blanc de Blancs Champagne

Charles Simon Blanc de Blancs Champagne now available at Monsieur CHATTE cellar.

Champagne Charles Simon is an expression of refinement from the famous Champagne region of France.

Tasting Notes:

The Blanc de Blancs blend is an original and elegant Champagne. It has a brilliant golden colour.
Its aromas reveal a duality between very ripe lemon, almost reminiscent of mirabelle plum, and white flowers.
On the palate, it is rich and indulgent. The fine bubbles delicately caress the palate. The finish shows beautiful persistence, with notes of ripe citrus and vineyard peach.

Grape Variety: 90% Chardonnay – 10% Pinot Blanc

Serving suggestions:
Serve at 18°C. This Champagne pairs perfectly with shellfish or sea bream tartare.

About Charles Simon Champagne

Charles Simon may be a newcomer to the Champagne scene.

However, his story begins with deep roots in France’s renowned wine country. The house’s two proprietors, Davy Dosnon and Simon-Charles Lepage, bring experience, passion, and a strong connection to the vineyards of their native region.

Davy Dosnon first developed his expertise through formal studies in viticulture and winemaking.

After completing his training, he gained valuable experience at several established Champagne houses. These early roles helped him understand the region’s traditions while inspiring him to pursue a more personal approach to Champagne production.

Later, Dosnon inherited several vineyards from his grandfather. This opportunity allowed him to work closely with the land that shaped his family’s history. In 2005, his friend Simon-Charles Lepage joined him, adding fresh ideas and shared ambition to the project.

Together, the two winemakers combined their knowledge and vision to create the Charles Simon Champagne house. Their goal remained clear: produce distinctive Champagne wines that reveal the character of the local terroir. By respecting traditional methods while embracing their own creative perspective, they established a house with a modern identity and an authentic regional spirit.

Today, Charles Simon represents the next generation of Champagne producers, combining family heritage, vineyard expertise, and a commitment to expressive, terroir-driven wines.
