It has a brilliant golden colour.<br \/>\nIts aromas reveal a duality between very ripe lemon, almost reminiscent of mirabelle plum, and white flowers.<br \/>\nOn the palate, it is rich and indulgent. The fine bubbles delicately caress the palate. The house\u2019s two proprietors, Davy Dosnon and Simon-Charles Lepage, bring experience, passion, and a strong connection to the vineyards of their native region.<\/p>\n<p>Davy Dosnon first developed his expertise through formal studies in viticulture and winemaking.<\/p>\n<p>After completing his training, he gained valuable experience at several established Champagne houses. These early roles helped him understand the region\u2019s traditions while inspiring him to pursue a more personal approach to Champagne production.<\/p>\n<p>Later, Dosnon inherited several vineyards from his grandfather. This opportunity allowed him to work closely with the land that shaped his family\u2019s history. In 2005, his friend Simon-Charles Lepage joined him, adding fresh ideas and shared ambition to the project.<\/p>\n<p>Together, the two winemakers combined their knowledge and vision to create the Charles Simon Champagne house.
