Coeur de Coupigny is a raw cow milk cheese. The texture is soft and the rind is bloomy. Coeur de Coupigny is made in Haute Normandie nearby the famous appellation Neufchatel.
It is said that young maidens of the region used to gift this cheese to their gallents. Meanwhile priest would describe the shape as an angel wings.
Expect a soft and smooth paste with a pronounced taste. Will make wonder with a crusty bread and a full body red such as a Cabernets based red of a Cote du Rhone.
