“As son of a winemaker, you might say I have wine in my blood.
Born in the Hospice de Beaune, growing up amongst the Grand Crus of Burgundy until moving down South to the vineyards of Château Canet, meant that vines, grapes and cellars, were never far away.
It was not before long that I spent my summers in the vineyards and early fall in the cellar. Continuing on this path and building my experience, I found myself working the cellars of Mendoza, far from home but not from wine!
The crescendo: Cinsault IGP Domaine D’ O ’s 12 hectares in the AOC Limoux. A blend of my Burgundian roots and Languedoc upbringing. Revisiting the Burgundy classics of Chardonnay and Pinot Noir, here in the South of France at the piedmont of the Pyrenees, near the source of the river Aude .
Domaine D’O’s first harvest in 2018, marked a new chapter for me. I am looking forward to the future “recolte” hope you enjoy the results as much as I do.

Grape Varieties: 100% Cinsault
At 350 meter above sea level the Cinsault grapes do exceptionally well! The have more time to slowly ripen at the slightly cooler temperatures while the clay and limestone soils gives the wine an elegant and fresh style.
Tasting Notes: At first an elegant fruity aroma’s with notes of strawberry and raspberry. Then harvesting at the precise moment to limit the alcohol at 12,5% gives us the right balance between body and acidity which make the rosé fresh and elegant.
Food Pairing recommendations: A great friend with a delicious cold cut platter, or simply as an apéritif!
