Brebicet cheese has a creamy consistency similar to a Brie. However subtly stronger aromas and components than one would expect. Probably because made from sheep rather than cow or goat milk. Nevertheless all of our tasters found it incredible and requested multiple samplings.
Cow milk & sheep milk, what’s the difference? Sheep milk has more fat and protein than cow or goat milk. As a result the cheese feels more opulent. Likewise Brebicet is both subtle with an undercurrent of sweetness.
