Handmade at Ashley Chase Estate in the county of Dorset, This cheddar ages for around 6 months and reaches average maturity.
It gets a balanced flavour and a smooth, firm texture.
Once the cheddar reaches optimal maturity, we add summer truffles (Tuber Aestivum Vitt) for an earthy flavor.
Then cheese keeps ageing into the cellar to reach a total of 9 month ripening process.
After this mix, they give the cheddar shapes and size after pressing and cutting it.
The result is a high quality smooth bodied creamy cheddar displaying strong black truffle flavours and coated with black wax.
