This is a cow’s milk cheese, produced only on the Asiago plateau in the Veneto foothills in Italy as per DOP regulation.
The cheese-making tradition in the provinces of Vicenza and Trento dates back to more than a thousand years.
This cheese received the additional label “Product of the Mountains”.
Texture wise, this cheese goes through many variations and textures, according to its ageing.
There are two types: fresh cheese has a smooth melting texture while the aged one has a crumbly texture.
Tasting notes : Overall a Fresh and soft mild cheese. The rind has a straw colour with a white paste and some small to medium irregular holes.
Enjoy the cheese on a cheese board by itself or cooked with some pasta or sauce as it melts perfectly.
This cheese can pair beautifully with a pinot gris or a fruity and chilled pinot noir.
