Le Sorezien is a 100g cheese.

First, Sorézien is an artisanal dairy cheese made from raw goat and cow’s milk. It has a soft texture, a natural rind, and is of the lactique type. It is produced by La Laiterie Marzac, located in Revel in the Haute-Garonne department, in the Occitanie region.

Then, this small cheese has a cylindrical shape and weighs about 100 grams.

Its rind, cream-colored, is thin and slightly pleated. A subbtle white down covers the cheese.

Last but not least, when cut open, we can discover its dense and supple paste.  A layer of goat’s milk curd, white in the center, surrounded by two layers of cow’s milk curd, cream-colored.

A  thin line of vegetable charcoal separates those 2 layers.  Overall, this makes it a very elegant cheese!

On the nose, Sorézien offers a hay aroma.

On the palate, it is a mild and fresh cheese that combines finesse, creaminess, and the flavor of goat’s milk with the softness and taste of cow’s milk. A slight bitterness and a touch of salt are revealed at the end of the tasting.
